Thai Chicken Wings Recipe

Ingredients:
10 pcs chicken wings – wash and pat dry
5 cloves garlic
½ tsp ground white or black pepper
3 pcs fresh coriander root
½ teaspoon coriander seeds
1 tbsp fish sauce (optional)
3 tsp salt
½ teaspoon sugar
1 ½ cups corn flour
Chilli according to your taste
One Fiji grass (softer part of the root)
Cooking oil
Instructions
- Crush the garlic, chilli, peppercorn, Fiji grass, coriander seeds and root into a paste.
- Place chicken wings into a large bowl and add the marinade. Mix well.
- Transfer into a large Ziploc bag and place in fridge and marinate for 1 hour or overnight.
- Remove the wings from the fridge 20 mins prior to cooking. You’ll want them to be at room temperature before cooking to ensure even cooking inside out.
- Add cornflour to the mixture and mix well.
- Carefully place wings into the hot oil and let them cook for about 3 mins per side.
- Remove and drain on a paper towel before serving.
