Thai Chicken Wings Recipe

10 pcs chicken wings – wash and pat dry
5 cloves garlic
½ tsp ground white or black pepper
3 pcs fresh coriander root

½ teaspoon coriander seeds
1 tbsp fish sauce (optional)
3 tsp salt
½ teaspoon sugar
1 ½ cups corn flour

Chilli according to your taste

One Fiji grass (softer part of the root)

Cooking oil


  1. Crush the garlic, chilli, peppercorn, Fiji grass, coriander seeds and root into a paste.
  2. Place chicken wings into a large bowl and add the marinade. Mix well.
  3. Transfer into a large Ziploc bag and place in fridge and marinate for 1 hour or overnight.
  4. Remove the wings from the fridge 20 mins prior to cooking. You’ll want them to be at room temperature before cooking to ensure even cooking inside out.
  5. Add cornflour to the mixture and mix well.
  6. Carefully place wings into the hot oil and let them cook for about 3 mins per side.
  7. Remove and drain on a paper towel before serving.
