INGREDIENTS:
2 1/2 to 3 cups shredded rotisserie chicken
3/4 cup finely diced onion
3/4 cup finely diced bell peppers
3 large cloves minced garlic
1 – 4oz can green chilies with juice
3 Tbsp. salsa
1 Tbsp. taco seasoning
1 tsp. oregano
1 tsp. cumin
1 tsp. chili powder
1/4 tsp. white pepper
1/4 tsp. salt
oil
12″ flour tortillas
Cheese
black beansĀ 2 Tbsp.
salsa – heated salsa jalapenos avocados tomatoes lettuce sour cream limes
Method
In a skillet on medium heat add oil, onions and bell peppers. Cook and stir for 2-3 minutes.
Add minced garlic and stir for another minute.
Add spices, stir and cook for another minute.
Add green chilies and juices.
Cook and stir for one minute. Add shredded chicken.
Cook and stir for 2-3 minutes or until chicken is coated and heated through.
Add 3 Tbsp. salsa. Stir until incorporated.
Remove from heat, cover and set to the side.
Take Totilas. heat and spread cheese on it in the middle, then chicken, black beans, sauce, lettuce and other stuff that you have. Wrap the totillas and cut in the middle using a knife.
