Ingredients required – 2 cups cashews, 1 cup sugar and 500 grams khoya.
Add cashews to a blender and grind to form a fine powder.
In a separate bowl, mix sugar and khoya. Add this mixture to a pan and keep it on medium flame. Add ½ cup water and mix well. Cook for a few minutes until the mixture gets thicker.
Now add the powdered cashews and mix continuously to form a soft mixture. Add 1 tsp ghee to make it smoother (optional).
Take out the mixture on a greased plate or tin and spread it evenly. Keep the thickness equal to a barfi.
Let it set for a while and then cut out diamond-shaped barfis.
