Dates or Khajoor Halwa Recipe

This halwa is shaped like barfi or fudge. unlike other traditional halwa recipes does not have any extra sweetener like sugar or jaggery thus making it one of the healthy and nutritious Indian dessert recipes. This Halwa also serves as an energy booster, especially during the fasting season. it supplies all the required nutrients without any added sugar disadvantages.
INGREDIENTS
  • 2 cup (260 grams) dates / khajoor, pitted
  • 1 cup hot water, for soaking
  • ½ cup ghee / clarified butter
  • ¼ tsp cardamom powder
  • 2 tbsp cornflour
  • ½c up water, for slurry
  • 10 cashew / Kaju, chopped
INSTRUCTIONS
  1. firstly, in a large bowl soak 2 cups of dates in 1 cup of hot water for 30 minutes.
  2. blend to smooth paste.
  3. transfer the dates paste to a large Kadai.
  4. add ¼ cup ghee and mix well.
  5. keeping the flame on medium, keep stirring until the ghee is absorbed well.
  6. add 2 tbsp of ghee and continue to cook.
  7. cook until the mixture thickens and turns glossy. takes approx 15 minutes.
  8. in a small bowl take 2 tbsp cornflour.
  9. add ½ cup of water and mix to form a smooth lump-free slurry.
  10. pour in cornflour slurry and mix well.
  11. cook on medium flame stirring continuously.
  12. the mixture thickens and turns glossy after 30 minutes.
  13. in a small bowl take 2 tbsp ghee and roast 10 cashews until it turns golden brown.
  14. add in fried cashew, and ¼ tsp cardamom powder to halwa and mix well.
  15. transfer the halwa mixture to a tray lined with baking paper.
  16. level it up with the help of a spatula.
  17. now rest for 30 minutes or until the halwa is set completely.
  18. cut into pieces with a sharp knife.
  19. finally, enjoy dates halwa or store them in the refrigerator and enjoy for a week.
