Paneer Stuffed Besan Ka Cheela

It is basically a spiced and savoury pancake recipe prepared with chickpea flour mixed with the dry assorted spice mix. It is a popular breakfast dish from North Indian cuisine, but famous across India due to its, choice of ingredients and preparation time. Besan chilla is also known for its versatility and can be easily customized with various ingredients, herbs, and spice mixes.

 INGREDIENTS
for chilla batter:
  • 1½ cup besan/gram flour
  • ¼c up rava / suji
  • ¼ cup curd
  • ¼ tsp turmeric
  • ¾tsp salt
  • 1 cup water
  • oil (for roasting)
for paneer stuffing:
  • 1 cup paneer (grated)
  • 1 carrot (chopped)
  • ½ capsicum (chopped)
  • 1 tomato (chopped)
  • 3 tbsp sweet corn
  • 2 tbsp coriander (chopped)
  • ½ tsp salt
INSTRUCTIONS
  • firstly, in a mixer jar take 1½ cup besan, ¼ cup rava, ¼ cup curd, ¼ tsp turmeric and ¾ tsp salt.
  • add 1 cup water and blend to smooth batter.
  • pour the batter into a large bowl and rest for 10 minutes.
  • meanwhile, to prepare the stuffing, in a bowl take 1 cup paneer, 1 carrot, ½ capsicum, 1 tomato, 3 tbsp sweet corn, and 2 tbsp coriander.
  • add ½ tsp salt and mix well.
  • paneer stuffing is ready.
  • to prepare the chilla, heat the dosa pan and pour the chilla batter.
  • spread as thin as possible.
  • once the chilla is cooked from the top, spread 1 tsp oil.
  • cover and roast on low flame until the chilla is cooked well.
  • now spread prepared paneer stuffing uniformly and cook for some time.
  • roll the chilla tight keeping the stuffing intact.
