Potato or Aloo Halwa is generally prepared in winter but can also be prepared for any occasion and celebration ritual. It is also consumed during fasting a lot.
Ingredients:
6 medium-sized potatoes, boiled and mashed
1/4 cup sugar
1/4 cup milk
1 tablespoon almonds, chopped
1 tablespoon cashew nuts, broken
1 tablespoon raisins
2 green cardamom, crushed
6 tablespoon clarified butter
1 tablespoon coconut, desiccated
Method:
Heat clarified butter in a heavy bottom wok or pan. Add cardamom and mashed potatoes.
Roast the potatoes on low to medium heat with continuous stirring till golden in colour. It will take 15-20 minutes. Add chopped nuts to one side of the wok and roast for 2-3 minutes.
Add milk and sugar and cook till ghee comes out from the edges. Garnish with desiccated coconut and serve warm.
