An extremely healthy and filling savoury pancake recipe made with cottage cheese, vegetables & semolina. It is basically an extension of the popular Veggie Nutri pancake with additional paneer grate stuffing with vegetables. It can be an ideal morning breakfast recipe, especially for kids if not for adults and can be ideally served with a choice of spicy dips or chutney recipes.
Ingredients
for suji batter:
1cuprava / suji/semolina(coarse)
¾cupcurd
½tspsalt
½cupwater
½tspeno fruit salt
for paneer mixture:
2tbspoil
½onion(finely chopped)
1carrot(chopped)
2tbsppeas
2tbspsweet corn
2tbspcapsicum(chopped)
½tsppepper powder
½tspchilli flakes
½tspsalt
1cuppaneer(grated)
INSTRUCTIONS
Firstly, in a bowl take 1 cup rava, ¾ cup curd, and ½ tsp salt.
mix well making sure everything is well combined.
add ½ cup water and mix making sure there are no lumps.
cover and rest for 10 minutes.
meanwhile, in a pan heat 2 tbsp oil. saute ½ onion until it shrinks slightly.
